Raena Morgan: Bruce, how did you find out about coconut oil?

Dr. Bruce Fife: Well, you know, when I went to school, I was told that coconut oil was an unhealthy oil because it was primarily a saturated fat. And that’s what people believed.

RM: It really got a bad reputation, didn’t it?

BF: Exactly. And so, I was in a meeting with a group of nutritionists one day and one of the members of the group stated that coconut oil was one of the good fats. And that it didn’t cause heart disease and had many health benefits. And we were all amazed. “What? I didn’t know. Coconut oil healthy?”

RM: I know. It was like a cheap oil that was used in movie theatres or something.

BF: But this nutritionist backed up her statement. She cited some studies that showed some benefits to coconut oil. And it really intrigued me. And so, I started to do some research. And I went to the medical research and I looked up coconut oil and I kept coming across article after article showing benefits to coconut oil. In fact, I didn’t find anything that was really negative. They were all benefits.

RM: How does this happen? Something as qualified medicinally, nutritionally gets a bad rap like that?

BF: Well, the researchers knew about it, but the general population didn’t. And there was prejudice against saturated fats.

RM: Okay.

BF: And so coconut oil was lumped in with the other saturated fats as being unhealthy. But people really didn’t understand the chemistry and the history and the science behind it to know any better.

RM: It was during the low fat craze, is that when it happened?

BF: Yes.

RM: So, it does saturated fats have medicinal benefits?

BF: Saturated fat has nutritional benefits, medicinal benefits. They’ve been using coconut oil in medicine for many, many years. Even doctors have been using it, even though they themselves didn’t realize they were using it. For example, it’s been used in over-the-counter anti-candida medications. It’s used in baby formula. I mean, it’s been used in baby formula since the beginning of time; or since the beginning of when they started using baby formula because the fats in coconut oil are very similar to those in mother’s milk.

RM: Amazing.

BF: Yeah.

RM: Isn’t nature clever? Thank you, Bruce.

Coconut oil is about 50 percent lauric acid, a rare medium-chain fatty acid found in mother's milk that supports healthy metabolism and is now being studied for its anti-fungal, anti-viral, and anti-bacterial, health-protecting properties. Overall, coconut oil contains 92% saturated fats, and only 1% Omega-6, the fat Americans get way too much of.
